To increase your maximum health pool you need to find special pieces of fruit. These fruit are quite rare and are scattered across the map. They are always located on a tree, usually trees with much bigger trunks and thicker foliage. Not every tree has fruit.
Once you’ve found a tree with fruit, you need to use your bow. Use Left on the D-Pad to select your bow and them aim at the fruit before taking a shot to bring it down. Once you bring it down to ground level you can pick it up and increase your maximum health pool.
