You can get lucky and find them in any space station but I’d say this is less than a 1% chance of happening. What you want to do is get an economy scanner for your freighter so you can scan sectors for their economies. The more expensive ships will end up in the nicer economy sectors. If it says it is declining then a high class ship won’t end up there unless you are really lucky. If the economy is booming you will have a higher chance to find a high class ship or freighter. Do not do this method if you don’t have the money to back it up, I’ve run into ships that cost 20 mil and ships that cost 75 mil so be ready.
When you find the economy you want to try, head to their space port and wait for ships to hop in. The race that is in the space port will determine the likely hood of the S Class ship.
